I'm going to travel to India by overland route, starting end of June. Although I don't plan entering Iran before 1 September I already had to apply for an Iranian visa. At the beginning of September I will be in Tabriz. So do you think it will be possible to get a 30 days extension in Tabriz a few days after my arrival?

After the visa is issued, you have 3 months time to enter Iran and 30 days to explore the country. Your exit may happen after the 3 months validity without facing any problem.
Visa extension will be done in the Alien Offices of all the major cities such as Shiraz, Esfahan, Tehran, and Yazd. You should provide them with two passport-size photos, about 20$ and of course your passport.
