Joojeh kabab is one of the most popular Persian dishes which consists of pieces of chicken first marinated in minced onion and lemon juice with saffron then grilled over a fire. It is sometimes served with grilled tomato and pepper.
Ingredients: (4 servings)
- 1 kg chicken
- 1/2 cup extra-virgin olive oil
- 2 large onions, grated
- 4 medium tomatos
- salt
- black pepper
- 1/2 teaspoon saffron (optional)
Direction:
After washing and cutting the chicken, place them in a large pot containing the marinade.
Prepare marinade: mix olive oil, grated onions, saffron, salt and black pepper. Wash and cut chicken into small pieces, then remove the skin. Marinate overnight or for several hours in refrigerator. The container should be covered.
Thread chicken on long, thin metal skewers. Thread leg and thigh pieces, wings and breast pieces separately, as breast requires slightly less cooking. Also thread the tomatoes separately on another skewer. Brush with marinade. Grill the chicken just until they are browned for about 5-10 minutes on each side, turn those frequently.
Joojeh Kabab can also be prepared in the oven. Prepare chicken as before, pre-heat the grill to a high temperature, and place just under the grill, again turning frequently. Serve hot with buttered polow or on middle-eastern bread.
